A fine dining experience awaits you at Akar Restaurant. It is on another level altogether. When you walk into the restaurant, the vibe is high. Under a domed bamboo roof, you will be delighted by the unique setting at the jungle’s edge. In the evening, a spectacular light show springs to life. The music ramps up and coordinates with the pace of laser lights projecting and mapping across the treetops. The jungle comes to life and dances with the dark night sky.

As I dined with my partner, the lights skirted the trees and entwined nature with technology, imagery, brilliance and dazzle. This is no ordinary dining experience.

The food is also next level. I devoured my grilled camembert cheese starter with roasted cashew nut and pickled fennel, followed by the seared Jimbaran barramundi fillet. This charcoal speciality was cooked with soft, delicate flavours and presented on the most unique table setting I have ever seen. More on that later.

My partner’s starter was a beautifully presented half- stuffed capsicum with caramelised onion, cannellini beans, roasted walnuts, and wild mushrooms. Totally delicious. This was followed by the Akar charcoal speciality Australian Black Angus grain-fed strip loin and was served with Akar’s unique creation of a secret blend of three types of spicy salt. Next came the artistic presentation of the chilli chocolate (68%) dessert with vanilla ice cream, crushed almonds, and lemon Chantilly. It was almost too good to eat.

When you dine and get swept away by the light show, bear in mind that this marvel is not just a Saturday night special. Seven nights a week, the light show casts it’s magic against the deep green jungle backdrop. The waiters are enthusiastically marvelling along with the show, adding to the experience. The restaurant atmosphere is incredibly lively, and the super friendly staff are almost as entertaining as the light show itself. As the music gathers momentum, pitch and volume I noticed the personal touch of the manager going table to table, making sure all the patrons were greeted and made to feel welcome. And sparkle, the night certainly did and was matched by our sparkling black and midnight blue tablecloth, complete with a mirror placemat. Very unique.

If you want to try something novel, get ready to be entertained. High heels and a slinky dress are a good fit, if the mood takes you, and if you want the night to continue, check out the K-Club DJ scene. A line-up of international DJs regularly entertains the crowd, so check beforehand. You can finish the night by sipping a few cocktails overlooking the seven infinity pools below. For a combination of romance, fine dining, nature and luxury, grab your partner and go.
